1 month is quite nice. Since it's cold why not visit Hakone? It's not far from Tokyo. Stay the night there, go to some onsen and take a look around. You'll also have a good view of Mount Fuji. If you find it expensive to stay the night, come back soon after you leave the onsen.
Also, if you're going to kansai to visit Kyoto and Osaka you might as well go to Nara.
I don't see the point of buying a KFC dinner but to each his own. Christmas is basically Valentine's day over here. If you want to go to some restaurant be sure to book it early. Your girlfriend (and you possibly) might enjoy Disney Sea. Just avoid going during Christmas again. It's very close by in Chiba. You can just take the regular train to go there from Tokyo.
For restaurants I recommend checking the reviews on tabelog. This is the English site: https://tabelog.com/en/
I'm not sure if it the English version is worse but the data should be basically the same.
Around December you can check out the Roppongi Hills Christmas Illumination. It's really pretty. That said, I find Christmas around here quite boring but it can't be helped as they don't have this tradition here.
Ah, avoid taxis if you can, they are really expensive. Also,if you get lost, miss the last train and it's hard to get back to the hotel or wherever you're staying look for some manga cafe. It's not expensive. Many McDonalds are 24h but it's not particularly comfortable.
I don't know much about shops to buy old games, consoles etc. I reckon they're a bit expensive in Akihabara. There's a small mall in Nakano, just outside the North exit called Nakano Broadway, in the upper floors you'll find quite a lot of stuff. Old comics, games maybe. I can say for certain though.
